MethodStep 1 Sauté the shallots, currants, Chinese Spice and sugar to the olive oil until the shallots are translucent and golden.
Step 2 Add the coffee and turn the heat to low and simmer for at least 20 minutes or until the mixture is thick like a jam.
Step 3 Add fresh lime juice and adjust the seasoning with salt and sugar.
